She takes meds and I'm worried she's not even the real her because of big pharma. I'm thinking about emptying her medicine capsules and refilling with sugar so I can see what she's really like off meds before considering a serious relationship with her. Any suggestions?

You can't just stop meds like that cold turkey.

I dated a bipolar girl before she got on meds.
My advice to you is to be prepared to have your mind be ****ed multiple times, it's like dealing with different people and you know the signs and triggers do you just have to be very aware of who you are dealing with and good at navigating it until she is "herself" again

Dated two bi-polar girls in the last year. One that readily admitted it and the other I figured out she was bi-polar after witnessing her demonstrate the same types of behaviors from the admitted bi-polar girl.
The awesome thing is, when it's hot, it can't get any hotter. It's like, WOW. insane, intense, deep, powerful. The awful thing is, when it's cold, it can't be any colder.. Like, "who the **** are you?"
I don't think I could do it again... It's kind of painful.

One of the girls I had been seeing on and off for 4 years. But the actual amount of time we spent together was like 3 or 4 days a year total. It was really weird.
The girl is stunningly beautiful. She's a model.. Had a few superbowl commercials.. Is even an identical twin.
We would get together and she'd look deep in my eyes and tell me how much she loves me and how special I am to her, etc. etc. Then the next day... cold as ice. Then we wouldn't speak for months and months. This went on for years.
****ed with my head something awful. I feel in love with her.. WOuld have put a baby in her.. But she was so bi-polar.. I eventually smartened up and cut it off entirely. best thing I ever did.. But she still lives in my mind.

Do not mess with her meds. It'll get worse.

It's not something she'll ever be off of. Why do you want to see her act crazy?

The effects of severe depression and mania are dangerous. Keeping her on her meds is a good idea.

Why in the world would you possibly want to do that... If you were dating a girl that had a heart condition would you take her off her meds without her knowledge to know her heart was real and actualy worked? If the meds are aligning her brain chemistry, there is no difference. It's seriously slightly sickening that you would consider this a good idea or even remotely moral to do without someone's knowledge.
Been with a bipolar girl as well, and I can attest to the same as the other men have said - when it's good, there is nothing better. When it's bad, there is nothing worse. Dating a bipolar girl normally results in a bipolar relationship as well.

If she's a good person to you when she's on her meds then that's all you should care about. She can't help that she was born with a certain type of brain chemistry. But if she goes off her meds without the doctor's okay or she acts crazy even when she's on them, then it's understandable why you wouldn't want to be with her anymore.
Don't trade her meds with sugar pills though. Bipolar people are on STRONG meds and when they are suddenly forced off of them, they get really, really sick.
I haven't dated a bipolar person, but I've been friends with many bipolar women and some of them have lost their medical insurance before and been forced off their meds against their will and gotten really, really sick physically because of it.
It's like going to rehab for any drug. Bipolar drugs are so strong that all of them that take them are physically addicted to them and that's why they get sick.

Glad everyone else here is on the same page. My personal thought process was : 1) Mess with meds 2) She dies by some freak mishap related to meds 3) You just committed murder
Best of luck with that.
