If you end up in Phnom Penh book reservations to Cuisine Wat Damnak, 6 course tasting menu for $31 USD, very good food and excellent value.

There's really no way to "spend a day" on Koh Phi Phi with the ferry schedule. It is really touristy, but I recommend finding the earliest boat you can to Koh Phi Phi Lei (the National Park). You CAN be the only one on the beach if you get there early enough.

Go watch all the Lost le Blanc videos of YouTube, and right down the things you see and would then want to do.

First of all- jeaulos. Why was I not invited!?
How long are you traveling for? That's a lot of ground to cover if it's only a month long trip or less.
I've only been to Thailand out of those and Thailand is pretty easy/safe. Don't attempt to bring or do any drugs in the country. They have very strict anti drug laws and you will end up in jail if caught. Do not start a fight with a Thai. Thai people defend their own, even if they don't personally know the person. You will get your ass kicked. Dress modestly if your going into temples. The more touristy the area the less this matters. You won't get in trouble or anything but it's seen as a huge sign of respect and they will respect you back. Talk to people! Or try! Even if they don't know a lot of English Thai people are very sweet and they will try to talk to you. It's a great experience. Eat off markets and foot carts as much as possible. It's delicious and cheap. I've been sick once out of 75 days of eating like this. It's less scary than people think. Only drink bottled water. It could be smart to carry toilet paper on you if your not accostumed to the plumbing there. Many places only have squat toilets and what my husband calls "butt guns" for cleaning yourself. Try Durian. It's a fruit...and it's interesting. At coffee carts if you want coffee that isn't instant ask for "coffee Bolan." That's spelled wrong but I had my most success with that. "Nid noy" means a lititle. It can also mean "do you mind" depending on how it's said but if your trying to get a little sugar or a little spicy it will be understood. "Phet" means spicy "phet phet" means really spicy. If your white you really have to try to ask for spicy because they'll assume you can't handle it. "Ching" means true. Just say it confidently. If you say It as a question it means "really?"
Hmm trying to think of other stuff. May add more in a bit.
