if you have really nice big shrimp with the head on, New Orleans style "barbequed" shrimp is always a winner. There's nothing BBQ about them whcih always confused me, but forget about that. They are best if you have some really high quality fresh french bread to eat them with www.mrbsbistro.com/recipes_shrimp.php

a simple boil with corn, potatoes, veggies and spices is always nice.

boil them in salty water spiked with this and a couple lemons and a head of garlic after you boil the shrimp, boil some new potatoes in the same water

i used to have a recipe for big prawns where you make this homemade sambal and grill them in the shell and it was awesome but i can't find it

stir fry some eggplant, set aside then stirfry the shrimp with tons of thai bird chilis, ginger, garlic, fish sauce, coconut milk, add veggies back and then dump in a bunch of thai basil

With shrimp, stick to simple. Adding too much can make you forget it's seafood.
