Step #1 : Go Fishing Step #2 : Catch trout Step #3 : Clean trout (just gut, don't skin... too much work - MAKE SURE YOU REMOVE THE BLOOD LINE!) With trout gutted, beheaded, and on ice, do the following : Melt 1 tablespoon of butter in the microwave (low heat, low time). Add salt, pepper, ancho chili powder, smoked paprika, minced garlic, olive oil, and whatever else you like Mix well, then baste the interior of the trout thoroughly. Place a small wedge of lemon and a small wedge of lime in the cavity Oil baking sheet well Place trout on baking sheet and place in over at 350F for 15min... then check it and give it a few more minutes until desired consistency is reached. Remove. Apply butter or Cajun Power (or whatever you like) Enjoy. The pic above is from two weekends ago, but we did the same thing this weekend... and it was just as good : ) Remember! Trout have lots of small bones and you DO NOT want to swallow them. So, chew carefully and try to pull the backbone out with most of the ribs attached... it's a little bit of a chore to eat trout... but you caught it yourself that morning, so it's worth it, right? -darc
