What's the difference between Tex-Mex and "Authentic Mexican food?" I get chewed out by my friends when I mention I want "mexican food."
I get a barrage of "Tex-Mex isn't real Mexican food, bro."
They can't give me a real answer...

tex mex restaurants usually give at least 5x the portion of authentic mexican food.... but not as tasty. it's pretty much its own category now and can't really compare it to authentic stuff

Tex-Mex is whitewashed Mexican food.
When I was in Arizona last month, I noticed On the Border has restaurants in Phoenix now. I asked CJPA if he'd been there and he said he had and it was okay but it was whitewashed.
Way too much queso and red sauce. Mexican food is better with green sauce and just a sprinkle of shredded cheese.

Find an authentic Taqueria or a Carniceria with a Taqueria in it, order a taco, eat it and then you'll know the difference.

Tex-Mex = Taco Bell. Cheese on everything, meat is considered the primary ingredient.
Real Mexican food primarily contains beans and rice.

Staying out of this thread...
My big pet peeve is socalers calling their mexican food mexican food. It's not, it's baja food, just like tex-mex is tex-mex food.

Authentic = taco truck mexican. Tortilla, meat, cilantro, onions, salsa on the side, usually green.

Cali, arizona, new mexico, and texas all have different styles of "mexican" food.
New Mexico is clearly best though.

Arizona = New Mexican mexican food in terms of authenticness. Only difference is AZ is more of a red sauce cuisine while NM is authentic as well, but uses more of the green sauce.
