You can use any oil to cook with, whether or not it's gonna taste good is another matter. I routinely use home made garlic oil, sh*t is bomb.

don't use olive oil. get something with a higher smoke temp. safflower is good one and readily available at most stores.

safflower is easiest and cheapest for a very good smoke temp (510*).

nah, i think that's olive oil you're thinking of. Avocado oil is marketed as a healthier alternative as well as excellent for high heat cooking.

most cast iron steak recipes have you sear it for 30 seconds on each side and throw into 500* oven. Hence why it's important getting an oil with a smoke point > 500*.

oil ONLY the food not the pan, if you even need oil, I always cook my steaks when the pan is smoking hot for about 1 minute each side, then finish in the oven @425, for 5 minutes on a 1 inch thick steak or 8 minutes for a 2 inch thick steak...100% perfect every damn time to mid rare.
I season liberally with Tony Chachere's only, but I've tried all sorts of things from red pepper and crushed black pepper (with mortar and pestal) but I like the saltiness and spiciness of tony chachere's
