My parents always had fancy cheese So when im home i usually destroy all of it in this:
You'll need to cook macaroni. 2 pots going.
First: carmelize onion (in butter, or bonus points for bacon!) and a half a clove of garlic. scrape the bottom of the pan, that fried onion on the bottom'll will make the sauce awesome. turn the heat way down, like around 4 or 5.
Now heres the fun part. My parents always had crazy stuff like brie, gouda, baby parmesan, all that hoity toity stuff only the queen would have. So really whatever cheese you got is good to throw into it. you'll need a lot depending on how much milk you throw into the onions.
Keep the heat low, put cheese in the pot slowly continually stirring, i use a whisk, but a spoon would do just fine. and make sure you dont stop stirring, prevent dirty pans cheese burns easy #rant2#
You'll know the sauce is done when it gets thicker than paint. thats the best description i can give:P pour your cooked macaroni into your casserole dish, then your sauce. Then top it with bread crumbs and more cheese.
bake the sucker on a good 425 until the top cheese is melted, then its done.

terrific way of putting it. so what does the onion do? just accent the cheese sauce? fried onion is really sweet, always good in any sauce.

I like this recipe and I like the curry powder idea for a little kick. But cp isnt that hot to me anymore

You should use that jalepeno cheese sauce that taco bell uses - or make some of your own

J-pepper sauce is AMAZING on mac n cheese, and it would work great in this recipe, I agree. It's just I cant get any fresh peppers over here now
