On the 8th day....God created....Stroganoff meatballs!
Meatballs
-2Lbs Ground Beef -1.5 Cups of bread crumbs ( Bonus points for making your own. extra for whole wheat!) -1/4 cup milk -1/4 cup chopped onion -2 beaten eggs -1 tsp of salt, pepper to taste -1 finely minced garlic clove -(Extra for the cajun, red peppers and tabasco)
Combine all ingredients in a large bowl, Mix it up and roll into balls of desired size, i usually go around 2.5 inches in diameter. Place on a cookie sheet, with edges (duh) and bake at 375 degrees for 25-30 minutes dependant on size. Once done drain the cookie sheet and set em aside.
Now for the godly sauce.
-1/2 cup of chopped onion. (carmelized) -4 tablespoons of butter, or margarine (if you're a health nut, wussy) -2 tablespoons of flour -2 tablespoons of ketchup -1 10 ounce of undiluted canned consomme. -1 cup of sour cream
Carmelize your onion in butter, add flour and mix until beaten in. then add ketchup and consomme. Cook it all slow on low heat. once thickened add sour cream. The sauce should come out dark orange, and friggin delicious.
Put your meatballs and sauce in a casserole dish and keep at a decent heat until you're ready to serve.
I've served this with basmati rice or thin/wide egg noodles. if you can, go for the egg noodles.

Addition, Extra mad bonus points for putting crushed peppers/tabasco/any satanic hot sauce in the sauce.

I'm going to make one substituion. Family is on a vegetarian week. Gonna keep everything the same, except instead of beef, gonna either use tofu, or veggie patty mix. Should be good.

^vegetarian meatballs ARE very good, and this recipe might help with that if you make them right.

Meatballs are usually on my unsafe list, but because no one makes them right. The 2 times I tried, I ended up with mush as well.

people tend to use too much milk or extra large eggs that put too much liquid.
thats why i use bread crumbs, they take in extra moisture, and help evenly cook the meatballs.
