I've been craving some mac and cheese. I found a recipe for a healthy version online, but it still wasn't all that healthy. So, here is what I created. Ingredients: 3 tablespoons plain dry breadcrumbs 10-ounce package spinach 2 cups almond milk 30grams protein powder 1 Egg 2 cups shredded extra-sharp Cheddar cheese 1 cup low-fat cottage cheese 1/4 teaspoon salt Freshly ground pepper, to taste 4 cups whole-wheat elbow macaroni, or penne

No, used vanilla. (Last protein order was from Smart Powders. They put the 10lb protein in a bag which is a pain to use everyday, so I just store it in the old ON jug)

That does not look bad at all. I've always had a problem with doing whole wheat pasta in macaroni & cheese. It didn't occur to me to use spinach to make a richer flavor.

Such as- cheese cottage cheese doesn't melt and make a sauce very well IMO.
