I've made his beef jerky, where you lay the strips of beef on an air filter and strap the thing to a floor fan. You put the fan in the window, and for blocks around, you smell jerky, but no one knows where its coming from.

Freezing the onions is a great idea
I don't like battered as much. I usually use red onions, soak them in a mixture of buttermilk and Frank's red hot, then toss in a mixture of flour, corn starch, baking powder, salt, pepper, smoked paprika, chili powder, garlic powder, and Cayenne

Soak onion rings in buttermilk for an hour in fridge. Then dip in rice flour and fry. Result is super crispy but light batter with a sweet and simple to bite through onion ring. Easy and the best. You are welcome.
