cut thin, roast in oven with olive oil
put on sandwiches wiht other veggies roasted in a similar manner

salt and pepper too
zucchini, portabella mushrooms, etc
roasted red pepper but that is a different roasting process
+some goat cheese and a little balsamic glaze = win
and a piece of meat = mega win

we just cut them up, toss with a diced onion, couple cloves of garlic, olive oil, salt, pepper, and crushed red pepper.

You could always eat them raw. Don't cook away all the nutrients.

I like putting them raw in salad. Try it first before you do that. It's an acquired taste.

In the south we do squash casseroles, YUM! Lots of them on the internet, but not nearly as healthy as most of the other suggestions.

Raw is fine. I usually end up eating half of them raw as I'm getting other stuff prepared to cook them...
A little balsamic vinegar is pretty badass on them, but they're good by themselves. -darc
