Going to fire up my Weber Smokey Mountain later for some baby back ribs and thinking of doing a fattie stuffed with onions, pepper, jalapenos, and cheese...wrapped in a bacon weave.
Any tips or pointers since I have never smoked using this doohickey before

do a practice run on a cheap piece of meat, and don't have hungry guests waiting

Yeah. Based on the methods I have been reading, I see it going around 4-5 hours for the ribs for 250 degrees. Figured, I would estimate around 6 for those extra hours.

Ribs are tricky, its all about the timing, I tried twice with no foil and had good success, the one time I wrapped in foil for the 4th hour the meat fell right off the bone.

You probably will and it's fine. Don't set your expectations too high. It's fine to mess up on a new machine.

This past weekend I smoked what I like to call "FIRE BRISKET" I injected the brisket with a habenero sauce and rubbed a cajun spice on top. I was suprised to see the injected habenero sauce actually could be seen in the meat, it still had its orange color. Either way it was good and hot.
