What I wonder is why the limbs and stuff move for so long after they're removed, I figure it's from the nerve endings of course but that's just so odd they'd still have muscle spasms that strong and that way for so long.

I think it's really cool I've had cooked squid/octopus before and it's not bad, really really tough though. I can imagine how tough it is to get down when it's still alive and slimy

I wouldn't have a problem eating it if they could de-slime it first, that alone would probably make me gag continuously, the cooked version isn't slimy aside from whatever sauce you put on it.

The nerve endings will still cause movement after death, even in humans.
They're really not "alive" (well the octopi are lol) but they still respond to stimuli until the nerve endings are discharged of all the chemicals that make them work. I can't explain it that well, don't know enough, but that's roughly it.
